Asparagus recipe: Green Asparagus salad with raw salmon

Ingredients for 4 servings:

1 kg green asparagus

salt 1 / 2 Vol
spring onions 250 g raw salmon fillet
5 tbsp.
Lemon juice white pepper a.d.M.
4 tbsp. Oil

Preparation:
Green Asparagus wash bars at the bottom third of Peel, in bite-
pieces in salt water and about 10-15 minutes just
cook. Drain asparagus and allow to cool.
Putzen spring onions, outer skin is removed. Wash the onions and crunchy with the
parts from the green cut into thin rings. The salmon fillet
in as thin slices, half the lemon juice to trickle
, cool place.
The remaining lemon juice with salt, freshly ground pepper and oil to a salad dressing
stir. Pieces of asparagus and spring onions is
short let. Immediately before serving the salmon strips
gently mix. Do not leave, otherwise
fishy taste of the salad, but serve immediately with toast. A dry white
fits in well to do so.
